Better than a stone Jul 14, 2010 After reading the reviews (5 stars is pretty amazing) we were sold on this product before we received it. We have been thrilled with it. We've had a couple of broken pizza stones, but from the feel of this pan it will last a hundred years.
Healthy choice Jul 06, 2010 I bought this after reading on a German cooking blog that pretzel dough should not be baked on an aluminum baking sheet (Pretzels are dipped in a baking soda solution prior to baking). If pretzel dough caused a reaction with the AL and absorbed traces of it, then there was a whole lot of other stuff (mostly with salt or acidic content) that shouldn't go on it either. My old aluminum pan had to go.
Note: Healthy people can eliminate even relatively high doses of AL through their kidneys. This is only a problem in case of limited kidney function or if someone is allergic to AL.
We love our new pan because pizza bakes evenly throughout, and the crust is always done. We have now broiled steak on it several times: Just heat the pan along with the oven and lay the steak on it. The bottom will be seared immediately. No need to flip it. The whole steak was done medium in 5 minutes. Add sliced onions to the pan before setting it on the table, and they will be cooked by the residual heat of the pan in a few minutes.
It cleans so easily, looks great on the table, and is easier to handle than I had expected (the integrated handles are perfect).
My Favorite Pan Jun 28, 2010 This is by far the best pizza pan ever, and it can be used for so much more. When I bought a new (smaller) oven, my main consideration was to be sure that this pan would fit. I carried it around to the appliance showrooms to be sure! This is one of my favorite pans and it gets heavy use.
Don't Be Afraid of Soap Either Jun 16, 2010 This is by far the Best Pizza Pan I have ever used. Cooks evenly and keeps pizza warm. Cooks and keeps crust toasty and yummy. The manufacturer says use only hot water to clean. However, us old folks who have used cast iron for more than a few decades now, are not afraid to use a little soap to keep old oil from starting to smell and taste rancid. Once washed, and rinsed with hot water, dry with a towel and set on your stove burner on high for a few seconds just to heat up and totally dry off. Next time you use the pan Do use spray oil before you start to cook. This pan is also great as a egg, pancake, steak griddle. Keep in mind this pan gets Hot, so keep pot holders close at hand at all times. A way to tell when this pan is hot enough to cook on when using on a burner, run some cold water over a spoon and shake off droplets onto pan, if the droplets sizzle and dance around a bit before they go into steam, this baby is ready to cook!
Perfect for general baking Jun 13, 2010 I intend to use this pan solely for general baking, never for pizzas, and it has never disappointed. I especially like how it is stronger than any stainless steel baking sheet at a size that will handle most baking needs. I would consider buying a stainless steel baking sheet if most of them were made with much stronger material so it's no surprise that I decided to go with the pan that will never warp and never feel flimsy.
I recommend this pan for general baking use over stainless steel baking sheets.
